Proper Hospitality engaged LTH to lead the ideation, development, and execution of F&B programming for the ambitious relaunch of the iconic Shelborne in South Beach. LTH developed the core philosophy for all food and beverage venues — including Pauline, the signature fine dining restaurant — alongside a cocktail lounge, speakeasy concept, pool and beach programming, all-day café, events, and in-room dining. LTH managed the full F&B critical path, developing nearly 160 bespoke recipes with complete administrative documentation, and deployed a ten-person task force for pre-opening training and operations.

Dayglo Presents — owners of the Brooklyn Bowl brand and The Capitol Theatre — enlisted LTH to create the food and beverage experience for their most ambitious project yet: a live music and supper club developed in partnership with the estate of Jerry Garcia. LTH crafted a culinary and beverage concept rooted in Garcia's life, heritage, and influences, working closely with his family to develop a menu that felt deeply personal. When Nine Orchard's ownership transitioned to self-management of their F&B programming, LTH partnered with property leadership on a months-long revitalization — covering menu development for both culinary and bar, building a new management team, and introducing new training and operational systems. Six months into the engagement, Nine Orchard's Swan Room bar was named among the best hotel cocktail bars in New York City by the Michelin Guide.

Partner Hospitality and developer Wade McDevitt enlisted LTH to lead F&B ideation and execution for a new luxury destination in Greenwich's Belle Haven enclave. Following a multi-million dollar renovation, the storied estate is being reimagined as an intimate all-suite luxury hotel across three acres. LTH's scope spans concept development, menu creation, procurement, operational structuring, and pre-opening training for the full F&B portfolio.
