Proper Hospitality engaged LTH to lead the ideation, development, and execution of F&B programming for the ambitious relaunch of the iconic Shelborne in South Beach. LTH developed the core philosophy for all food and beverage venues — including Pauline, the signature fine dining restaurant — alongside a cocktail lounge, speakeasy concept, pool and beach programming, all-day café, events, and in-room dining. LTH managed the full F&B critical path, developing nearly 160 bespoke recipes with complete administrative documentation, and deployed a ten-person task force for pre-opening training and operations.
